Celebrating Valentine's Day: Truffle Treats
Chocolate and Valentine’s Day just seem to go hand and hand. Here is a fun food dessert treat that the kids will love to make.
Ingredients:
6 squares of Baker’s semi-sweet chocolate
1/4 cup butter
7 oz. Flake coconut
8 oz. Cream cheese, softened
2 1/2 cups milk or half-and-half cream
1 pkg (4 serving size) Instant chocolate pudding (e.g., Jell-O brand)
1 cup thawed whipped topping (e.g., Cool Whip brand)
2 squares Bakers semi-sweet chocolate, grated
Directions:
1. Line a 13-inch by 9-inch baking pan with waxed paper to extend over the sides of the pan.
2. Heat chocolate and butter over low heat or in microwave on medium power for two minutes, until butter is melted. Stir until completely smooth; reserve two tablespoons.
3. Stir chocolate into coconut; toss to coat evenly. Press mixture into baking pan.
4. Beat cream cheese at medium speed of electric mixer until smooth; beat in reserved chocolate. Gradually beat in milk.
5. Add pudding mix. Beat at low speed until well blended which will take about two minutes. Gently fold in whipped topping. Pour over crust. Sprinkle with grated chocolate, pressing slightly. Freeze until firm, for at least four hours or overnight.
6. Remove from freezer. Run a knife around he outside. Lift from pan onto cutting board. Removed waxed paper. Cut into diamonds, squares, or triangles. Store leftover treats in the refrigerator or freezer.
Yield: approximately 20 treats.
